Ingredients
- 250 g rice (e.. basmati rice)
- 1 bunch spring onion (s)
- 2 red pepper (s)
- 4 banana (s)
- 4 slices mango (s) (from the can)
- olive oil
- Vegetable broth
- Curry powder
- Lemon juice
- possibly salt and pepper
- chili

- Cook the rice according to the instructions on the packet. Transfer to a salad bowl to cool. Add some turmeric to the still hot rice and stir. Makes a great, yellow color.
- Wash and chop the spring onions and peppers. Heat a little olive oil in a non-stick pan and steam the vegetables while stirring until soft (approx. 15 minutes). Sprinkle curry powder over the vegetables and fry with them. The aroma is amazing.
- Peel the bananas and cut in half lengthways. Heat some olive oil in another pan and fry the banana halves on both sides until they are soft (approx. 2 to 3 minutes per side). Sprinkle the top side with curry powder.
- After frying the bananas are cut into bite-sized pieces and added to the rice. Also cut the mango slices into bite-sized pieces and add to the rice.
- Now add a good dash of water (approx. 200 ml) to the vegetables and season with vegetable broth. Also add curry powder. After about 1 to 2 minutes of cooking, remove the pan from the stove and let it cool down a little.
- Now add the vegetables to the rice. Stir everything and season with lemon juice, chilli powder, curry powder and possibly salt and pepper.
- Let the salad stand for a while. And then: Bon appetit!
