Double Baked Potato Recipe with Eggs, Feta Cheese and Artichokes

Double-baked potatoes are potatoes that have been baked whole and then cut in half. The insides are removed, leaving a small border around the potatoes to help preserve their texture, while the insides are mixed with other ingredients (often cheese, sour cream, and bacon). The filling is placed back in the potato skins and baked a second time.

Ingredients

  • 3 lbs. Baked potatoes (washed and dried)
  • 1 tablespoon olive oil
  • generous salt and pepper

Potato filling:

  • 2/3 cup plain yogurt
  • 1 cup shredded feta cheese
  • 1 cup pickled artichokes (drain and cut into large chunks (keep thick))
  • 1/2 teaspoon salt
  • 1/2 teaspoon Worcestershire sauce
  • 6 large eggs (lightly beaten)

Bruschetta (optional):

  • 1 cup cherry tomatoes (chopped)
  • 1 shallot (chopped)
  • 1 garlic clove (minced)
  • 2 teaspoons balsamic vinegar
  • 1 tablespoon parsley
  • salt and pepper

Guacamole (optional):

  • 2 avocados (ripe)
  • 1/4 teaspoon salt
  • 2 teaspoons fresh lemon or lime juice
  • 1 garlic clove, minced

Directions

  1. Preheat oven to 425 ° F. Line a baking sheet with parchment paper and set aside.
  2. Combine the potatoes in olive oil to coat and season generously with salt and pepper. Place on a baking sheet and bake for 60-70 minutes, until well cooked and tender in the middle (use fork dough; this step can be done the day before with boiled/chilled potatoes stored in the refrigerator).
  3. Remove from oven and let cool for about 10 minutes.
  4. Thoroughly cut the potatoes in half, then let cool for a few more minutes. Using a small spoon, gently scoop up the inside of the potatoes and place them in a large bowl. You don’t need to remove all of the potato meat, and a small amount of peel attached to the skin will make them less brittle.
  5. Add yogurt, feta cheese, artichokes, salt and Worcestershire sauce to a bowl of potato toppings. Add eggs and stir until well blended. * I recommend leaving it as a thick mixture to get the best flavor.
  6. Place the potato skins back on the baking sheet and gently place the mixture over the skins.
  7. Double-baked potatoes are good on their own or served with additional ingredients.
  8. Bruschetta (optional) Combine all ingredients in a small bowl and let sit for 30 minutes. This can be done in one day.
  9. Guacamole (optional) Combine all ingredients in a medium bowl. This can be done in 1-2 hours and stored in the refrigerator.
