- 1 mango (s)
- 1 papaya
- 1 lime (s), only juice it
- 3 tablespoon cane sugar
- 1 ½ dl water
- 1 tablespoon brandy (Chantré), or 2 .
- 0.5 ½ vanilla pod (s), scraped out

- First you squeeze the lime. Then you cut the mango and papaya into approx. 2cm large cubes and add them to the lime juice so that they keep their color.
- Then the sugar and the lime juice, which can still be poured from the fruit, are heated and caramelized a little, deglazed with water and chantré and half the vanilla pod that has been scraped out is added. Reduce the whole thing to a good 2/3. Then add the fruit and simmer gently for about 10 minutes so that there is only a little juice left. Remove the vanilla pod and let the compote cool.
- Tastes wonderful with coconut or vanilla cream.
