Ingredients

  • 400 g fish fillet (s) (salmon or cod)
  • 1 tablespoon olive oil, or sunflower oil
  • 50 g butter
  • 1 onion (s)
  • 30 g breadcrumbs
  • 2 tablespoon parsley, chopped
  • 4 tablespoon herbs, frozen, e.g. 8-herb mixture
  • salt and pepper
  • 150 ml meat broth or fish broth

Instructions

  1. Wash the fish fillets, pat dry, season with salt and pepper.
  2. Finely dice the onion. Fry in oil with butter (mixed with oil, the butter does not turn brown so quickly). Mix with breadcrumbs and herbs. Add 50 ml of the broth to the mixture. Pour the remaining 100 ml into the baking dish. Crumble the mixture of onions, herbs, breadcrumbs, etc. onto the fish. Cover with aluminum foil and put in the oven at 250 degrees for 15 minutes. After the 15 minutes remove the aluminum foil so that the crust takes on its brown color. Be careful not to get too dark.
