  • 1 tablespoon butter
  • 2 egg (s)
  • 150 g spinach
  • some boiling water
  • 1 onion (s)
  • 15 g flour (wheat flour)
  • 500 ml meat stock
  • 4 tablespoon crème fraîche
  • salt and pepper
  • nutmeg

Instructions

  1. Melt the butter in the pan and fry the eggs on both sides, cut into strips and set aside. Wash the spinach, put it in a little boiling water, briefly bring to the boil and drain in a colander. Finely dice the onion, sauté in a little fat until translucent, dust over wheat flour and pour in the meat stock. Beat through with the whisk so that there are no lumps. Bring to the boil while stirring and simmer for 10 minutes. Add the spinach, heat it, and season with the spices. Carefully stir in the creme fraich and the egg strips.
