Fried Scallops with Tarragon Sauce

The easiest and most delicious recipe for cooking scallops. The scallops are only fried in a pan for a few minutes and served with tarragon sauce, which is just as easy and quick to prepare.

Servings: 4

Ingredients

  • Scallops – 650 g
  • Fresh tarragon (chopped) – 1.5 teaspoon.
  • Olive oil – 1 tbsp
  • Dry white wine – 0.5 cups
  • Salt – 0.25 teaspoon
  • Butter – 1 tbsp
  • Ground black pepper (optional)

Directions

  1. Wash scallops and dry on a paper towel.
  2. Heat a large skillet over medium-high heat, brush with oil. Place scallops in preheated skillet and cook for about 3 minutes on each side.
  3. Transfer the scallops to a plate, cover with foil to keep warm. Add wine, tarragon and salt to the same pan, cook, scraping off the fat from the walls, about 1 minute after boiling. Pour the sauce into a bowl or gravy boat, add butter, stir.
  4. Drizzle the sauce over the scallops and serve immediately. You can sprinkle the scallops with black pepper if desired.
