Fried Zucchini Salad with Feta, Nuts and Yoghurt Dressing

Zucchini salad with feta, nuts and yoghurt dressing will give you a fresh look at familiar zucchini. In combination with feta, nuts and a delicious dressing based on natural yoghurt, zucchini acquire a rich bright taste, while not losing their tenderness. Be sure to try cooking!

Ingredients
Zucchini – 800 g
Natural yogurt – 130 ml
Feta cheese – 70 g
Walnuts – 20 g
Fresh mint – 10 g + for decoration
Garlic – 10 g
Lemon – 1/3 pc.
Olive oil – 15 ml
Salt to taste
Ground black pepper – to taste
Directions
We prepare the necessary products. You will also need parchment paper during cooking. We turn on the oven to heat up to 180 degrees.
Wash the courgettes and cut them lengthwise into 5 mm thick plates. Then we cut each plate into 3-4 parts.
Remove the zest from the lemon using a fine grater. Squeeze out the lemon juice.
Peel the garlic and pass it through a press.
For dressing, combine yogurt, garlic, zest, lemon juice, salt and pepper. We mix.
Grind the mint.
Let the prepared zucchini cool.
Put slices of zucchini in several layers in a flat plate. I got two plates.
Pour the zucchini with yoghurt sauce.
Sprinkle with mint and refrigerate for 30 minutes.
Grind the nuts.
Cut the feta into small cubes.
We take out a plate of zucchini from the refrigerator. Sprinkle with nuts and feta cubes.
Zucchini salad with feta, nuts and yoghurt dressing is ready. Garnish with mint leaves if desired and serve.
