Ingredients
- 250 g couscous
- 1 bunch chives, chopped
- 4 tablespoon desiccated coconut
- 100 g apricot (s), fresh or dried, diced
- 1 pinch (s) salt and pepper
- 1 tablespoon olive oil
- 2 tablespoon orange juice
- 1 teaspoon mustard
- 1 teaspoon honey
- 3 tablespoons mint or lemon balm, chopped
- cinnamon

- Cook the couscous as instructed, allow to cool a little. Add the chopped chives, apricots and desiccated coconut.
- Make a salad dressing from salt, pepper, cinnamon, olive oil, orange juice, mustard and honey, best mix with a hand blender, then it will be nice and creamy. Pour the dressing over the salad and let it steep in the refrigerator for about an hour.
- Sprinkle the mint over the top to serve.
- Also delicious as an accompaniment to hearty meat such as lamb.
