Ingredients

  • 400 g bulur, (Köftelik bulur)
  • 3 tablespoon paprika pulp, hot
  • 1 tube tomato paste
  • 3 tablespoon oil, neutral
  • 3 tablespoon olive oil
  • 4 tablespoon vinegar (pomegranate balsamic vinegar), alternatively lemon juice
  • 1 bunch spring onion (s)
  • 1 bunch parsley, smooth
  • some salt and pepper

Instructions

  1. Put the bulgur in a bowl and pour a little boiling water over it. It shouldn`t be so liquid, rather it should be drier. Salt, mix and allow to swell. Add the paprika pulp and tomato paste and knead well with your hands. Add the oils and continue kneading. Wash and finely chop the spring onions and leaf parsley and stir in as well. Season to taste with salt and pepper.
