  • 20 g yeast, fresh
  • 1 teaspoon honey
  • 20 g butter
  • 100 g quark
  • 250 g spelled flour
  • 200 g whole wheat flour
  • 1 tablespoon salt

Instructions

  1. Dissolve the yeast with the honey in the lukewarm water. Mix the flours in a bowl and make a hole in the middle. Put the yeast water in this hole, dust with some of the flour and let it rest for about 15 minutes.
  2. Add butter, quark and salt and knead by hand for 10 minutes or with the kneading machine for 5 minutes. Cover and let the dough rise for 1 hour.
  3. Then knead the dough well again, fold it a few times, roll it out into a round shape and divide it into six or eight triangles using a dough card. Spray the triangles with water and then roll them in the grains. Cover and let rise for 20 minutes.
  4. Preheat the oven to 230 ° C. The rolls steam when pushed in, d. H. pour a cup of water into the oven. After 10 minutes, open the oven door all the way to let the steam out. Set the temperature down to 200 degrees. Bake for 10-15 minutes.
  5. Let cool on a kitchen rack.
