Ingredients

  • 1 ½ kg beans, (broad beans) as small as possible, fresh and unpulted
  • 250 g ham, (Serrano-), mild smoked bacon is also possible
  • 2 medium spring onion (s)
  • 4 tablespoon olive oil
  • salt and pepper
  • some parsley, chopped

Instructions

  1. Pulp the beans. Cut the onions and ham into small cubes. Let everything sizzle gently in a pan with the oil over low heat for about 15-20 minutes. The beans should be soft but still have a bit of bite. Season with salt and some freshly ground pepper and sprinkle with parsley.
  2. A typical starter in Spain with baguette.
