Ingredients
- 750 g potato (s), (floury)
- salt
- 1 onion (s)
- 300 g minced meat, mixed
- 1 egg (s)
- 1 tablespoon breadcrumbs
- pepper
- Paprika powder, (noble sweet)
- 2 apples
- 12 slices bacon
- Oil, for the skewers
- Clarified butter
- 150 g whipped cream
- 100 ml meat stock, (instant)
- 200 ml milk
- 1 tablespoon butter

- Peel, wash and quarter the potatoes and cook in salted water for about 20 minutes.
- In the meantime, peel the onion and dice it finely. Mix the minced meat with the onion, egg and breadcrumbs in a bowl. Season with salt, pepper and paprika.
- Shape the mince mixture into 24 balls.
- Wash, clean, cut apples into eighths. Cut the bacon into pieces about 5 cm wide.
- Place the bacon, apples and meatballs alternately on oiled skewers.
- Heat the lard in a pan and fry the skewers for 5 minutes. Take out of the pan and keep warm.
- Deglaze the roast with the cream and stock and simmer for another 2-3 minutes.
- Heat milk. Drain and mash the potatoes, mix with butter and milk, season with salt.
- Drizzle the sauce over the skewers and mashed potatoes. Serve garnished with lettuce and cress.
