Ingredients
- 400 g rye flour
- 200 g wheat flour
- 500 ml buttermilk, lukewarm
- 1 tablespoon, leveled salt
- 1 tablespoon wine vinegar, apple cider vinegar is also possible
- 1 tablespoon lemon juice
- 0.5 teaspoon ½ coriander
- 1 cube fresh yeast

- Mix both types of flour dry. Work the flour with the lukewarm buttermilk, salt, vinegar, lemon juice, coriander and yeast into a dough. Knead the dough vigorously and cover it in a warm place for about an hour.
- Put the dough in an oiled or greased loaf pan, bake on the middle rack of the oven for about 1 hour at 180 - 200 ° C and then leave to cool.
