Cut the onion into cubes, if necessary core and finely chop the chilli pepper, finely chop the garlic.
In a pan, fry the onions in the butter and olive oil until translucent. Add the garlic and sauté briefly. Then add the honey, the chilli (or the sambal oelek) and the mustard to the pan. Fry everything briefly and then deglaze with the vinegar and apple juice. Now stir in the tomatoes. After stirring in, add the spices, soy sauce and brown sugar. Season with smoked salt and plenty of black pepper for the smoky note. Finally add the sauce thickener and let everything boil down for about 20 minutes.
