Ingredients

  • 500 ml ketchup
  • 3 clove (s) garlic, chopped
  • 5 tablespoon sugar
  • 1 orange (s), juice it
  • 1 lemon (s), juice it
  • 3 tablespoon soy sauce
  • 2 tablespoon apricot jam
  • 50 ml cognac
  • 2 tablespoon maple syrup
  • 1 teaspoon Tabasco
  • 2 tablespoon mustard, hotter
  • 1 teaspoon Worcester sauce
  • 1 tablespoon paprika powder, noble sweet
  • 1 tablespoon curry powder
  • 1 tablespoon ginger powder
  • 1 sprig rosemary, stripped needles
  • 1 tablespoon thyme, rubbed

Instructions

  1. Mix the ketchup with the garlic, sugar, orange and lemon juice with a whisk. Add the remaining ingredients and mix everything very well.
  2. Makes 1 liter of sauce or marinade.
  3. Example of use: Marinate 1.5 kg spare ribs overnight in 300-400 ml sauce and bake in an oven preheated to 200 ° C for 50-60 minutes. Cover up towards the end if necessary.
  4. The sauce can be kept tightly closed in the refrigerator for 3 months.
