Khachapuri – Tortilla with Cheese

Traditional khachapuri with cheese is a recipe for a national Georgian dish made from dough with sour milk stuffed with cheese. Sometimes khachapuri with cheese is prepared, the recipe for which also includes yeast dough.

Servings: 8

Ingredients

  • Water – 150-200 ml
  • Sugar – 15 g
  • Dry yeast – 6 g (1 teaspoon)
  • or fresh yeast – 15 g
  • Flour – 450-500 g
  • Salt – 0.5 teaspoon
  • Eggs – 2-3 pcs.
  • Butter – 60-70 g
  • Pickled cheese – 600 g
  • or Imeretian cheese – 600 g

Directions

  1. The products for the recipe are in front of you.
  2. Prepare yeast dough in a sponge way. Dissolve yeast in warm water.
  3. Knead the dough from yeast, sugar and flour diluted in warm water.
  4. Cover with a clean towel and leave in a warm place for 15-20 minutes.
  5. After raising the dough, add salt, egg.
  6. Sift flour and add frequent to a bowl.
  7. Knead a soft, smooth dough that does not stick to hands and dishes. At the end of the batch, add one or two tablespoons of oil.
  8. Leave the dough warm to rise (40-50 minutes).
  9. Prepare minced meat. To do this, grate suluguni or Imeretian cheese on a coarse grater or pass through a meat grinder with a coarse grate.
  10. Then add one or two eggs and butter.
  11. Mix well.
  12. When the dough comes up, divide into apple-sized balls (8 pcs.), Roll out flat cakes 5-7 mm thick.
  13. Put the minced meat in an even layer (1/8 of the cheese) in the middle of the dough.
  14. Form a khachapuri – pinch like a cheesecake.
  15. Fry khachapuri at home in a cast-iron skillet over moderate heat, covering the pan with a lid. Heat a frying pan, pour in some oil, put the khachapuri with the filling down.
  16. Fry over low heat, covered, until golden brown (about 2 minutes).
  17. When one side of the khachapuri is browned, turn over, brush with butter (or a mixture of butter and egg) and fry until tender (about 2 minutes) under the lid. So fry all the cakes.
  18. Grease ready-made khachapuri and serve hot. Khachapuri – a cake with cheese is ready.
