Ingredients

  • 2 king prawns
  • 1 egg white, slightly beaten
  • 0.5 ½ apple, here ´Jonagold´
  • 1 dash syrup, (lime syrup)
  • 1 tablespoon chili sauce, sweet chicken
  • some sugar, brown
  • some salt, (vanilla salt)
  • some sesame seeds, black ones
  • amaranth
  • Oil, for deep-frying

Instructions

  1. Peel the king prawns, leave the tail on, remove the intestines and cut with a butterfly.
  2. Dip in the battered egg white and dip in popped amaranth. Fry in hot vegetable oil - attention! it only takes a few seconds. Drain on paper towels.
  3. Peel and core the apple and immediately puree with the lime syrup and chilli sauce and season with sugar if necessary.
  4. Put a salsa mirror on the plate, place the prawns on it, season with a pinch of vanilla salt and decorate with a little black sesame.
