A very simple, quick and delicious pork recipe. I also tried to cook beef, it also turns out very tasty – soft meat in a delicious sauce. I found the recipe in an old newspaper, where it was called “Kurzeme beef stroganoff”. It turns out that this is a traditional Latvian dish.

Kurzeme Style Meat Ingredients

  • Pork (shoulder) – 400 g
  • Cooked-smoked brisket (or smoked bacon) – 60 g
  • Pickled cucumbers – 80-90 g
  • Bulb onions – 1 pc. (170 g)
  • Water (or broth) – 200 ml
  • Sour cream – 100 g
  • Wheat flour – 1 tbsp
  • Garlic – 1 clove
  • Bay leaf – 1 pc.
  • Salt to taste
  • Ground black pepper – to taste
  • Vegetable oil (if the brisket is not fat) – for frying

  1. Cut the smoked brisket into strips.
  2. Peel the garlic and chop finely
  3. Peel the onion and cut into longitudinal feathers.
  4. Cut the pork into thin slices and beat off a little with a hammer.

  5. Cut the pork into longitudinal strips.
  6. Cut the pickled cucumbers into longitudinal strips.
  7. Send the sliced ​​brisket to a cold frying pan and fry. My brisket is not very greasy, so I added very little vegetable oil.
  8. Add garlic to the brisket and fry for 1 minute. Add onion and fry until golden brown.
  9. Remove the  onion, brisket, and garlic from the pan.
  10. Fry the pork in a frying pan without adding oil over high heat until golden brown. Add flour to the pork in a frying pan, mix and fry a little.
  11. Add cucumbers to the pork.
  12. Send the onion with brisket and garlic back to the pan. Stir, fry for 1-2 minutes.

  13. Pour water or broth into a frying pan, add sour cream and bay leaf.
  14. Mix everything well, cover and simmer for 15 minutes over low heat or until the pork is tender (in this case, add more water if necessary).
  15. Season the dish with salt and pepper to taste. Kurzeme meat is ready! Bon appetit!
