Ingredients
- 500 g potato (s)
- 1 tablespoon butter
- 3 shallot (s)
- 1 tablespoon butter
- 1 can corned beef or cured meat (450 g)
- 4 egg (s)
- 2 beetroot (pre-cooked, vacuum-sealed) + the juice
- 4 cucumber (s), sour
- 4 fish (s), sour herrings (e.g. rollmops)
- salt

- Wash, peel and boil the potatoes in salted water. Later pour off the water, allow to evaporate a little, add butter, season with salt and nutmeg and mash.
- In the meantime, peel the shallots and cut them into cubes. Fry these in a pan. Add the salted meat or corned beef and cook with it. Carefully chop the meat, then add the mashed potatoes and mix roughly. Season to taste with a little cucumber and beetroot juice, salt and pepper.
- Now fry the eggs in a large pan, dice the beetroot, and cut the cucumber into slices at an angle.
- Serving: First put the potato mixture in a ring so that you create a kind of pedestal. Put a fried egg on it, which has been cut out with a ring of the same size. Place the cucumber slices and rollmops, sprinkle the beetroot cubes over them. Season with pepper.

- Tip: If you prefer to use salty cucumbers, you should also serve salty herring (e.g. Matjes) with it.
