Make a yeast dough from flour, a little sugar, buttermilk and a pinch of salt, knead very well and let rise for at least 2 hours.
Put the lavender flowers in a hot pan and toss them briefly, briefly add the sugar and stir everything together.
Knead 2/3 of the roasted flowers under the yeast dough and form 12 rolls, let them rest for another 10 minutes, then place in the oven preheated to 180 °.
Beat the egg white with sugar a little (not quite firm), after 10 minutes take the rolls out of the oven, brush with the egg white and sprinkle with the remaining lavender flowers, finish baking, the rolls shouldn`t be too dark.
Instead of sugar, you can also add lavender honey to the dough.
