Lemon Cupcakes “Pink Pigs”

These wonderful lemon cupcakes, decorated with cheese cream and marshmallow marshmallows, are suitable not only for a children’s party, but also become an actual treat for the New Year’s table 2019, because the pig is the symbol of the coming year!

  • Wheat flour – 220 g

  • Powdered sugar – 2 tablespoons

  • Food color gel pink – a few drops
  • Gel red food coloring – a few drops
  • Marshmallow – 12 pcs.
  • Dark chocolate – 10 g

Directions

  1. Let’s start by making the cupcake dough. In a bowl, combine soft butter and sugar.
  2. Beat the butter and sugar with a mixer for a minute, then add the eggs and beat well again.
  3. Pour milk at room temperature into the resulting butter-egg mass, add the zest of half a lemon and 2 tablespoon. lemon juice. Stir the ingredients at low mixer speed.
  4. Mix flour with baking powder, sift into a bowl with base.
  5. Knead to a homogeneous dough.
  6. Divide the dough into muffin tins lined with paper capsules. In total, 12 cupcakes will turn out, each will take about 1.5 tablespoon. test.
  7. Cupcakes should be baked in an oven preheated to 180 degrees for 25-30 minutes. Remove the finished lemon cupcakes from the oven and let cool completely.
  8. For the cream, combine room temperature cream cheese, powdered sugar and pink gel food coloring.
