Ingredients

  • 3 egg whites
  • 150 g quark (low-fat quark)
  • 250 ml milk (skimmed milk)
  • 40 g suar
  • 30 g Gelfix (instant elatine)
  • 100 ml lemon juice
  • 10 g lemon (s) zest
  • Mint (lemon mint) for decoration

Instructions

  1. Beat the egg whites until stiff and set aside. Mix the quark with the milk and lemon juice until smooth. Mix the sugar, Gelfix and lemon zest and add to the other ingredients while stirring constantly. Finally fold in the egg whites carefully but thoroughly. Fill into timbale molds and refrigerate for approx. 2-3 hours until serving. Serve decorated with lemon mint.
  2. Serve with a fruit sauce made from pureed strawberries or raspberries.
  3. Variation: Simply replace the lemons with oranges. If you would like to refine the whole thing with a dash of lemon liqueur, simply use the same amount of less milk.
