Ingredients

  • 2 ½ cup water
  • 1 ½ cup rice, white (e.g. basmati)
  • 1 teaspoon salt
  • 1 ½ tablespoon butter
  • 1 lime (s), untreated (juice and grated zest)
  • 1 garlic clove (s), pressed through
  • 2 tablespoon parsley, chopped
  • 0.5 ½ bell pepper (s), red

Instructions

  1. Bring the rice, water, salt, butter, 3 tablespoon lime juice and garlic to the boil. Reduce the heat, cover and simmer until the rice is cooked and has absorbed all the liquid (approx. 20 minutes, depending on the type of rice).
  2. Mix in the parsley and 2 teaspoons of lime zest and garnish with thin paprika slices.
