Loose Cottage Cheese Bagels with Berries

Gorgeous cottage cheese rolls. Buttered cottage cheese gives the bagels a very delicate soft creamy flavor. A small amount of bright seasonal berries are very successful as a filling!

Ingredients

  • Blueberries – 25-30 pcs.
  • Gooseberries – 10-12 pcs.
  • Butter – 260 g
  • Cottage cheese (low-fat, soft) – 260 g
  • Flour – 350-450 g
  • Sugar – 100 g
  • Corn starch – 1-2 teaspoon

Directions

  1. Melt the butter and cool to room temperature.
  2. Mash the curd with a fork and add to the melted butter. Stir until the mixture is as homogeneous as possible.
  3. Add the sifted flour in portions, kneading a soft, non-sticky dough. Flour will need from 350 to 450 grams. It took me a total of 400 grams of flour (about 3 cups with a capacity of 200 ml).
  4. Form the dough into a ball or tortilla, cover the bowl with cling film and refrigerate for 1 hour.
  5. Cut off the gooseberry ponytails on both sides. Rinse the gooseberries and blueberries. Let the water drain and dry the berries lightly with a towel.
  6. Add starch to the berries and stir.
  7. Preheat the oven to 190 degrees.
    Divide the chilled dough into 2 parts. Roll out each part of the dough into a layer 2-3 mm thick. Using a large plate (I have a 25 cm dish), cut out a circle. Remove dough scraps.
  8. Cut the resulting circle into 8 parts. Place berries (2 blueberries or one blueberry plus one gooseberry) on the wide edge of each sector. Together with the berries, you can put a small pinch of starch. Roll into a roll, starting at the wide edge.
  9. Roll each roll you get in sugar on all sides.
  10. Cover a baking sheet with parchment paper.
    Place the bagels on a baking sheet.
    Bake the bagels at 190 degrees for 20-25 minutes.
  11. A small amount of berry juice may leak out, but the presence of starch will allow the juice not to burn, but forms a translucent, easily removable film.
  12. Cool the bagels and transfer to a clean plate. Crumbly cottage cheese bagels with berries are ready to serve.
