Ingredients

  • 400 g chanterelles
  • 1 medium onion (s)
  • 100 g bacon, Tyrolean
  • 8 tablespoon olive oil, virgin
  • 5 tablespoon white wine, dry or sparkling wine
  • 3 tablespoon vinegar, (white wine vinegar)
  • 100 ml vegetable stock, (instant)
  • 1 teaspoon mustard, medium hot
  • 1 pinch (s) sugar
  • 1 bunch chives

Instructions

  1. First, clean the chanterelles and cut the onion into small cubes.
  2. Cut the Tyrolean bacon into strips and fry it in a pan with 1 tablespoon of oil until crispy and then remove it from the pan.
  3. Now add 2 more tablespoons of oil to the pan and fry the chanterelles over high heat, then fry the onions briefly until translucent. This is now seasoned with salt and pepper and extinguished with 5 tablespoons of white wine. Then take this out of the pan as well.
  4. Now whisk the vinegar with the vegetable stock, the medium-hot mustard, the sugar, 5 tablespoons of oil and salt and pepper.
  5. Now just cut the chives into rolls and then mix everything together, i.e. chanterelles, bacon and chives, with the vinaigrette.
