Marzipan Log

This exquisite dessert can be prepared with any fruit and berry. Try laying marzipan layers with apples, pears, or oranges. Do not forget to sprinkle the fruit with 1-2 tbsp starch, otherwise they will give juice and the dessert will be “wet”.

Ingredients

  • peeled raw almonds – 200 g
  • sugar – 200 g
  • dried apricots – 300 g
  • walnuts – 100 g
  • honey – 50 g
  • small seedless grapes – 200 g

Directions

  1. Dip the almonds in boiling water for 1-2 minutes. Throw in a colander, peel off the nuts.
    Rinse the kernels and fry in a dry hot frying pan for 10-15 minutes, stirring constantly. Grind the nuts in a blender until puree.
  2. Sugar and 2 tbsp boil a thick syrup over low heat (until sugar is completely dissolved). Add chopped almonds to the syrup and heat, stirring constantly, for 3-4 minutes. Put the mixture on a flat dish, cover with plastic wrap and cool. Pass through a meat grinder.
  3. Wash dried apricots, steam in boiling water. Grind 200 g of dried apricots in a blender until puree. Chop the walnuts with a knife. Combine dried apricot puree and walnuts in a saucepan. Add honey and heat, stirring constantly, for 3-4 minutes. Wash the grapes, remove the berries from the branch.
  4. Cover the rectangular shape with cling film. Place whole dried apricots on the bottom, then – one third of the marzipan mass. Put half of the dried apricot puree with nuts on it.
  5. Put the grapes in a dense layer, on it the second third of the marzipan.
  6. Then add the remaining dried apricots and nuts puree and the remaining marzipan. Cover the mold with foil and refrigerate for 4–5 hours. Remove the marzipan from the mold, turn it onto a dish and remove the foil.
