Ingredients
- 1 small honeydew melon (s)
- 1 small red pepper
- 1 onion (s), red
- 100 g Parma ham, in one piece
- 100 g sheep cheese
- 1 handful walnuts
- 1 bunch rocket
- 2 tablespoon oil, (walnut oil)
- 2 tablespoon oil, (lime oil)
- 3 tablespoon balsamic vinegar, white
- 1 ½ tablespoon honey, (acacia honey)
- Salt and pepper, black

- Roughly chop the walnuts and roast them in a pan without fat.
- Halve the melon, remove the stones and use a ball cutter to remove even balls from the pulp. Cut the onion into fine strips and the peppers into fine cubes. Also cut the Parma ham into fine strips.
- Mix a dressing from walnut oil, lime oil, balsamic vinegar, honey, pepper and salt.
- Put the melon balls, diced pepper and onion strips in a bowl, pour the dressing over it, mix and let the whole thing stand in the refrigerator for at least 1 hour.
- Before serving, fold the cleaned rocket into the salad.
- Arrange the melon and rocket salad on plates and crumble the feta cheese over them. Also distribute the ham strips and the chopped walnuts on the salad.
- This goes well with fresh baguette or roasted ciabatta and a well-chilled glass of white wine!
