Meringue Cakes “Rats”

Make cute rat meringues for New Year, the symbol of 2020. And then luck will not pass you by. 

Ingredients

  • Egg whites – 3 pcs.
  • Granulated sugar – 160 g
  • Vanillin – to taste
  • Salt – 1 pinch
  • Corn starch – 1 tbsp
  • Almonds (halves) – 20 pcs.
  • Chewing marmalade – 10 pcs.
  • Chocolate – 20 g
  • Coconut flakes (optional)

Directions

  1. Prepare all the ingredients you need. We will need a gummy called “worms” for “rat tails”.
    Preheat oven to 150 degrees.
  2. Separate the egg whites from the yolks. Remove the yolks, we don’t need them.
    Pour the whites into a clean and cold mixer bowl and add a little salt. Whisk egg whites on medium speed until soft peaks.
  3. Add sugar one tablespoon at a time and continue beating the whites until firm peaks.
  4. The finished meringue should adhere well to the rims and retain its shape unchanged.
  5. Continuing to beat the protein mass at the lowest speed of the mixer, slowly add the starch, vanillin and mix for another 2 minutes.
  6. Line a baking sheet with baking paper. Using a pastry bag with a round nozzle, plant the figurines of the rats, pulling them out at the end (see photo). I got 10 pieces.
  7. You can sprinkle coconut on top of the blanks if you like.
    Place in a preheated oven, close the door and bake at 150 degrees for 5 minutes. Then turn off the oven and, without opening the door, leave the meringue cakes in the oven until they cool completely. This is about 5-6 hours.
  8. Break the chocolate into small pieces. Place the chocolate in a plastic piping bag. Heat water almost to a boil, pour into a glass. Submerge the bag of chocolate in hot water, periodically removing and kneading the chocolate until smooth.
    Then cut off the end of the bag and make the nose and eyes of the rats out of chocolate.
  9. On the head, just beyond the eyes, carefully make two cuts in the meringue and insert the halves of the almonds. These are rat ears.
  10. Make a hole in the back of the piece and insert the gummy tail.
  11. Spread the Rat meringues on a large platter and serve. And make sure that they do not run under the tree to your gifts!
