Ingredients

For the dough:

  • 200 g butter
  • 5 tablespoon oil
  • 150 grams sugar
  • 1 packet vanilla sugar
  • 6 egg (s)
  • 300 grams flour
  • 100 g cornstarch (Maizena)
  • 1 packet baking powder
  • 1 lemon (s), the grated zest it

For the cream:

  • 600 g blueberries (wild blueberries, lass or frozen)
  • 1 bar chocolate, white (from Milka)
  • 1 cup sour cream or crème fraiche
  • 1 dl milk

For the cast:

  • 2 bars chocolate, white (from Milka)
  • 150 g powdered suar
  • 3 tablespoon juice (blueberry juice)
  • 10 g coconut fat

Instructions

  1. Beat butter, oil, sugar and vanilla sugar until frothy. Add the eggs one at a time - stir each egg for at least 1 minute before the next one follows.
  2. Mix the flour, cornstarch and baking powder, sieve and gradually stir into the batter with the grated lemon zest.
  3. Drain the wild blueberries and collect the juice. Melt 1 bar of white chocolate, then stir until smooth and add a heaping tablespoon from the mug of sour cream and stir well.
  4. Put the remaining sour cream in a bowl, then add the chocolate mixed with sour cream. Finally, add the drained blueberries to the sour cream and puree everything with the hand blender.
  5. Spread 3/4 of the batter on a prepared baking sheet with a higher edge (greased or lined with baking paper). Then distribute the sour cream on the dough and pull a stirring rod through the dough while turning, so that some of the sour cream is stirred into the dough.
  6. Finally mix the remaining dough with the milk and cover the remaining sour cream with it.
  7. Bake in a preheated oven at 180 ° C for about 30 minutes.
  8. Break a bar of white chocolate into pieces. Melt in a double boiler or in the microwave, stirring until smooth. Sieve 150 g of powdered sugar and mix with 3 tablespoons of the collected blueberry juice so that it can be stirred until it is smooth but by no means too runny. Stir the melted chocolate into the icing sugar, teaspoon at a time. Spread the icing on the cooled sheet cake and let it set.
  9. Melt the second bar of white chocolate with the coconut oil, stir until smooth and use a teaspoon to spread it in the form of spots on the casting surface.
