Mini Pizzas with Chicken, Vegetables and Olives (in a Pan)

Mini pizzas in my family are a big and delicious piece! The base can be prepared in advance and frozen. When asked for something tasty, in a few minutes you can put together a gorgeous breakfast, snack, or even a full meal! Repeat on health!

Ingredients

For the test:

  • Milk (warm) – 150 ml
  • Sugar – 1 teaspoon
  • Dry yeast – 1 teaspoon
  • Salt – 1 pinch
  • Vegetable oil – 20 ml
  • Flour – 300 g
  • Fresh thyme (leaves) or dried – 1 tbsp
  • or Italian dried herbs – to taste

    For filling:

  • Tomato sauce – 80 g
  • Bulb onions – 1 pc.
  • Sweet pepper (red) – 1 pc.
  • Baked chicken fillet (sausage, ham) – 150 g
  • Hard cheese – 150 g
  • Pitted olives – 10 pcs.
  • Salt to taste
  • Ground black pepper – to taste

Directions

  1. We start the simplest dough for the recipe, but still, we check and activate the yeast. Make a depression in the flour, pour out the warm milk, and add yeast and sugar. Mix the milk with yeast and sugar lightly. Let the quick dough stand for 20 minutes.
  2. When the dough is right, add salt. You can add some more fresh thyme. It grows on our windowsill in a small pot. You can substitute dry thyme or add a mixture of Italian herbs.
  3. It remains to add only vegetable oil.
  4. We knead the dough. Cover the finished dough with a film or a towel and let it rise in the heat for 40 minutes.
  5. For the filling, boil homemade tomato sauce with a pinch of salt and sugar (to taste) to the desired thickness. We also take peeled onions, a slice of baked chicken, cheese, and olives.
  6. And from frozen sweet peppers and finely chopped onions, we will make vegetable frying.
  7. Cut the onion into thin feathers. In a mini pizza, it is better than the filling is completely ready, so fry the onion for just a few minutes, until golden brown.
  8. Now add the pepper. It cooks quickly anyway, and frozen is just lightning fast, so we add it almost at the end. Fry to evaporate excess moisture.
  9. Salt and pepper to your liking. We also focus on our cheese, which we will add: if it is salty, then we put less salt in the filling.
  10. The dough will rise and grow twice.
  11. Lightly knead the dough and roll it into a layer 4 mm thick.
  12. Cover with a towel – let the dough rest and rest for about 10 minutes, then, after cutting, the circles will not shrink and gather in a piece.
  13. We cut out the bases for mini-pizzas with the mold.
  14. We prick the dough with a fork so that it bakes better.
  15. Fry the dough pieces in a dry frying pan until golden brown on both sides. I ended up with 17 mini pizza basics that you can cook in advance and even freeze. And then, when they start demanding a treat from you, take it out and cook it quickly.
  16. We turn over the bases for mini pizzas – and you can distribute the filling. Tomato sauce – oh, and it turns out delicious!
  17. Then we spread the vegetable part.
  18. Add diced meat and cheese.
  19. Cover with a lid and wait a couple of minutes. As soon as the cheese melts, add half an olive in the middle.
