Ingredients

  • 220 g mirabelle plums
  • 300 grams flour
  • 120 g butter
  • 150 grams sugar
  • 1 tablespoon sugar
  • 1 tablespoon baking powder
  • 1 pinch (s) salt
  • 2 egg (s)
  • 0.5 liter ½ milk
  • 1 packet vanilla pudding powder
  • 1 piece (s) margarine

Instructions

  1. Beat eggs, sugar, baking powder and salt until frothy. Roughly cut the butter into pieces, add to the flour and add to the egg mixture. Knead with a hand mixer until a homogeneous dough is formed.
  2. Rub a 26 cm diameter baking pan with margarine or line it with parchment paper. Roll out 2/3 of the dough on the bottom of the pan.
  3. Mix the vanilla pudding powder with 1 tablespoon of sugar and 5 tablespoons of cold milk until lump-free. Bring the remaining milk to the boil and remove from the hob. Add the mixed custard powder while stirring constantly. Briefly bring to the boil again. Pour the warm pudding over the rolled out dough. Core the mirabelle plums and cover the pudding with it.
  4. Shape the remaining dough into crumbles and spread over the mirabelle plums. Bake the cake in the preheated convection oven at 180 ° C for about 35 minutes.
