Ingredients

  • 100 g cream cheese
  • 135 ml strong coffee or mocha, cold
  • 2 tablespoon powdered sugar
  • 70 g chocolate flakes
  • 240 g flour
  • 2 tablespoon cocoa powder
  • 2 teaspoons baking soda
  • 0.5 teaspoon ½ baking soda
  • 1 egg (s)
  • 100 g suar
  • 80 ml oil
  • 100 ml buttermilk
  • 30 ml heavy cream
  • 150 g couverture, white
  • 12 piece (s) confectionery (chocolate mocca beans)

Instructions

  1. Preheat the oven to 180 degrees. Grease the indentations of a muffin tin or put paper liners in them.
  2. For the filling, mix the cream cheese with 2 teaspoons of coffee, powdered sugar and 1 tablespoon of grated chocolate to a smooth cream.
  3. Carefully mix the flour with the cocoa, baking powder, baking soda and the rest of the grated chocolate.
  4. Beat the egg lightly. Add the sugar, vegetable oil, coffee, buttermilk and cream and stir everything well. Stir in the flour mixture until the dry ingredients are moist.
  5. Pour half of the batter into the recesses of the muffin tray. Put 1 teaspoon of the filling on top and fill up with the rest of the batter.
  6. Bake in the hot oven for 20 to 25 minutes. Let the muffins rest in the baking tray for 5 minutes, remove them and let them cool on a wire rack.
  7. Melt the couverture in a water bath. Dip the muffins in and decorate with 1 chocolate mocha bean each.
