Chocolate Muffins with Sundae Cream

Recipe for chocolate muffins on kefir and delicious cream “Plombir”. This butter-sour cream custard is ideal for decorating muffins and cakes, lining and sanding cakes or rolls. I advise you to cook!

Ingredients

  • For cupcakes:
  • Kefir – 100 ml
  • Butter – 100 g
  • Sugar – 200 g
  • Eggs – 2 pcs.
  • Cocoa powder – 40 g
  • Flour – 170 g
  • Baking powder – 1 pack
  • Salt – 1 pinch
  • Vegetable oil – for lubricating molds
    *
  • For the cream:
  • Butter (softened) – 200 g
  • Sour cream – 300 g
  • Egg – 1 pc.
  • Sugar – 100 g
  • Flour – 2 tbsp
  • Vanillin – a pinch
  • Salt – a pinch
  • Food coloring (optional)
    *
  • For decoration (optional):
  • White chocolate – 30 g

Directions

  1. Cook with constant stirring until thick.
  2. We shift the custard base of Sundae cream into a plate to cool down faster. We cover with cling film “in contact”. Cool to room temperature. We take out the butter from the refrigerator in advance so that it becomes room temperature.
  3. To make kefir muffins, mix eggs, sugar, kefir, melted butter, salt in a bowl.
  4. Add cocoa, baking powder and flour. We mix.
  5. We grease the molds with vegetable oil and fill half of the dough. We bake chocolate muffins on kefir at 180 degrees for 20-25 minutes.
  6. If desired, make snowflakes from white chocolate to decorate cupcakes with cream. To do this, melt 30 g of white chocolate, pour it into a cornet and draw small snowflakes on a stationery file. Place in the refrigerator until it solidifies completely.
  7. Beat the softened butter with a mixer for 1 minute.
  8. Without stopping whipping butter, add 1 tablespoon each. the cooled custard base of the cream, stirring well each time.
  9. Butter custard with sour cream turns out to be dense, airy and very tasty. Before using the cream “Sundae” it is advisable to completely cool it, but I will decorate the cupcakes with the cream right away.
  10. I dyed some of the cream blue and put the cream in a pastry bag with a large toothed nozzle.
  11. Decorate the cooled chocolate muffins with Sundae cream. Butter and sour cream keeps its shape well, but if it is cooled, the effect will be better.
  12. On top we decorate the cupcakes with cream (cupcakes) with white chocolate snowflakes.
  13. Chocolate muffins with Sundae cream are ready. Enjoy your meal!
