For the dough: Kefir – 500 ml Sugar – 350 g Eggs – 3 pcs. Cocoa powder – 5 tablespoon (with a slide) Butter – 150 g Flour – 400 g Soda – 1 teaspoon *
Beat eggs with sugar with a mixer. (A large amount of sugar in this recipe will add not only sweetness to the muffins, but also a rich chocolate color.)
Everything cooks very quickly, so we turn on the oven to heat up to 200 degrees. Mix flour with soda and cocoa.
Now add melted butter (cooled) and kefir to the eggs. Mix constantly with a mixer. We send the flour mixture into the bowl in parts, stirring with a mixer. You should get the consistency of a good store sour cream.
Fill in the molds 2/3. I have a silicone mold with paper capsules. We put in the oven and bake chocolate muffins at 200 degrees for about 20 minutes. Navigate your oven. A lot of dough, 23 muffins turned out.
Let the finished muffins cool on the wire rack, be patient, it will be even tastier!
Mix cocoa, sour cream, and sugar and heat on the stove until the sugar dissolves. You do not need to boil the mixture. Remove from heat and add butter, stir and wait for the oil to dissolve.
My favorite moment: we cover the chocolate muffins with icing, dipping the top of the muffins in the icing, and decorate with beautiful sprinkles.
