Ingredients

  • 300 g muesli, as desired
  • 2 egg (s)
  • 100 g powdered suar
  • 1 tablespoon honey
  • 1 pinch (s) salt
  • 0.5 ½ vanilla pod (s) OR
  • 1 teaspoon vanilla powder
  • 1 pinch cinnamon

Instructions

  1. Put the muesli in a coated pan and roast without adding fat or the like until the muesli takes on a light roasted color or it starts to smell slightly.
  2. Now add the honey and stir the muesli quickly until the honey becomes liquid and combines with the muesli.
  3. Immediately remove the pan from the heat and let the muesli stand for a good 5 minutes.
  4. In a mixing bowl, stir the eggs with sugar and a pinch of salt until frothy, and beat it for about 5 minutes until creamy.
  5. Mix the muesli with the egg mixture carefully.
  6. (The mass should be a little dry rather than too moist, but if it sticks, just add some unroasted muesli)
  7. Refine the muesli with the pulp of half a vanilla pod or the vanilla powder and a little cinnamon.
  8. Line a baking sheet with parchment paper or grease it well and use a teaspoon to cut off small heaps of the muesli and spread on top.
  9. You should leave enough space between the individual muesli heaps, as they will drift apart a little while baking; a good 3-4cm is sufficient if the piles are not too big.
  10. Bake the muesli cookies in the preheated oven at 175 ° top / bottom heat for a good 10 minutes until light brown.
  11. Let the muesli cookies cool on the baking sheet, as they will not set until they are cold.
  12. So please don`t take it down beforehand, as they break quickly at first.
