Nasjin (Ossetian Pumpkin and Cheese Pie)

The most popular pies in the world are Ossetian! Today is the pumpkin and cheese pie. This cake is called β€œNasjin”. Delicious dough, and the filling was almost eaten raw, barely saved! πŸ™‚ Everything turned out very tasty, I recommend!

Ingredients

For the dough:

  • Flour – 400 g
  • Water – 200 ml
  • Dry yeast – 1 teaspoon
  • Sugar – 1 teaspoon
  • Salt – 1/2 teaspoon
  • Vegetable oil – 1 tbsp

For filling:

  • Pumpkin – 350-400 g
  • Adyghe cheese – 150-200 g
  • Onions – 2-3 pcs.
  • Sugar – a pinch
  • Fresh thyme – a few twigs
  • (or dried thyme – 0.5 teaspoon)
  • Salt to taste
  • Ground black pepper – to taste
  • Vegetable oil – for frying
  • Butter – for greasing pies

Directions

  1. We activate the yeast. Add sugar, a spoonful of flour and the yeast to the water. Mix well and let stand for a couple of minutes. Then we will collect salt, flour and dough in a cup.
  2. When the dough is collected in one ball (lump), add vegetable oil and mix well for 5-7 minutes. We remove the dough to rise for 30-40 minutes (in a cup under a film).
  3. In the meantime, we will deal with the filling. Let’s prepare the products.
  4. Dice the onion.
  5. Fry the onion in a little oil until light golden brown.
  6. Grate pumpkin and cheese on a coarse grater.
  7. Add the fried onions to the pumpkin and cheese.
  8. It is very important to add thyme to the filling. I have grown fresh and young, from the windowsill, specially grown. You can use half a teaspoon of dry thyme.
  9. Gather the filling in a cup, add salt, sugar, black pepper and mix. Taste and adjust to your liking.
  10. Divide the finished dough into two equal parts (we get two cakes). Roll each one into a cake, in the center of which we put half of the filling. Preheat the oven to a temperature of 230-250 degrees.
  11. Put the dough into a bag, pinch the edge well.
  12. Then we pull the workpiece out with our hands, you can help yourself with a rolling pin. Be careful not to tear the dough.
  13. Put the cake 7-10 mm thick on a prepared baking sheet (covered with parchment). And send it to a preheated oven for 10-15 minutes, temperature – 230 degrees. Remember to make a small incision in the cake before baking to allow excess steam to escape.
  14. Grease the finished cake with a piece of butter and let stand for a while. The butter will soak in and add a creamy flavor. We prepare the second cake in the same way.
  15. And the taste of the finished Ossetian pie is simply magical! It’s good that we baked two – one is never enough! Aroma, appetizing appearance and awesome taste – this is all Ossetian nasjin pie!
