Ingredients
- 1 ½ kg mirabelle plums, weighed and prepared
- 250 g suar, brown
- 5 chilli pepper (s), dried, ground in a mortar
- 2 tablespoon spice mixture, (Ras-el-Hanout)
- 3 small onion (s), chopped
- 2 small cloves garlic, chopped
- 150 ml vinegar, white balsamic vinegar
- 1 teaspoon salt

- Mix all ingredients and place in a sufficiently large saucepan.
- Bring to the boil and then simmer over medium heat for about 1 hour.
- Pour into prepared twist-off glasses and stand on the lid to cool.
