Ingredients

  • 50 ml vinegar (white wine)
  • 100 g shallot (s), chopped
  • 850 g mirabelle plums, steamed and strained
  • 150 g suar, brown
  • 3 tablespoon chili paste, Chinese
  • Chili powder
  • Soy sauce, sweet

Instructions

  1. Let the shallots simmer in the vinegar, then add the mirabelle plums, sugar and chilli paste and continue to simmer on a low heat. (This works well in a wok.) Reduce the mixture until thick, season with chili powder and sweet soy sauce. Pour into twist-off glasses that have been rinsed out boiling hot and let cool upside down.
