Ingredients

  • 600 g potato (s)
  • 600 g smoked pork
  • 2 onions)
  • 500 ml cider, dry (alternatively cider)
  • 400 g apples, sour ones (e.. Boskoop etc.)
  • 1 tablespoon lard
  • 1 teaspoon marjoram
  • 2 tablespoon mustard
  • Sauce thickener, lighter
  • salt
  • 2 tablespoon crème fraîche
  • possibly water as required

Instructions

  1. Peel the potatoes and cut them into large cubes. Release the Kassler and also dice. Peel the onions and cut into small cubes.
  2. Fry the onion cubes in hot lard until translucent. Add the potato and smoked pork chops and fry briefly. Then pour on the cider. Add marjoram, if necessary fill up with enough water to cover the contents of the pot. Do not add any salt yet, as the Kassler is usually very salty. Cook on a low heat for about 15 minutes.
  3. In the meantime, core, peel and also cut the apples into cubes. Add to the stew and cook for another 10 minutes. Then thicken the stew with a sauce thickener, stir in the mustard and season with salt. Either stir the crème fraiche into the stew at the very end or place it on the plates when serving.
