Ingredients

  • 300 g bulur
  • 700 ml vegetable stock
  • 1 red pepper (s)
  • 1 bell pepper (s), yellow
  • 0.5 ½ bunch spring onion (s)
  • 200 g feta cheese
  • 1 shallot (s)
  • 1 teaspoon, heaped harissa
  • 0.5 tube ½ tomato paste
  • 0.5 ½ bunch parsley, smooth
  • salt
  • pepper

Instructions

  1. Bring the vegetable stock to the boil, add the bulgur and simmer gently for about 15 minutes until the bulgur has absorbed all of the liquid.
  2. Meanwhile, cut the bell pepper and feta into small cubes, finely chop the shallot and cut the spring onions into thin rings.
  3. When the bulgur is ready, stir in the tomato paste and harissa, then fold in the chopped vegetables and cheese and season to taste with salt and pepper.
  4. At the end, finely chop the parsley and garnish the salad with it.
  5. If you don`t want it vegetarian, you can, for example, cut the chicken into thin strips, fry them on the pan with salt, pepper and paprika and add them.
