Nutritious Vegetable Tortellini Soup

The recipe for a delicious nutritious soup with Italian tortellini dumplings to keep you warm on a rainy day.

Ingredients

  • tortellini – 250 g
  • olive oil – 1 tablespoon
  • carrots – 1 stack.
  • sweet green pepper – 1 pc.
  • onion – 1 pc.
  • celery shoot – 1 pc.
  • garlic – 1 Clove
  • basil – 1/2 tablespoon
  • oregano – 1/2 tablespoon
  • salt – 1/4 tablespoon
  • black pepper – 1/4 tablespoon
  • red pepper – 1/4 tablespoon
  • canned tomatoes in cubes – 800 ml
  • vegetable broth – 3 stack.

Directions

  1. Cook the tortellini in a medium saucepan as recommended by the manufacturer. Drain all the water and set aside the finished dumplings.
  2. In a large saucepan, heat oil over medium heat. Add chopped bell peppers, carrots, onions and celery. Cook for about 5 minutes, until vegetables are tender. Add garlic, herbs and spices. Simmer for another 1 minute.
  3. If you do not have canned tomatoes in cubes, you can use regular canned tomatoes by cutting them into small pieces. If only fresh tomatoes are available, pick the ripest and softest ones.
  4. Add tomatoes and broth to a saucepan. Bring the soup to a boil, make a small heat and simmer for another 10 minutes.
  5. Pour the hot soup into bowls, proportion the finished tortellini in it and serve immediately.
