Whip the cream very stiff and mix with the quark and sour cream, vanilla sugar and 150 g sugar.
Peel the oranges with a sharp knife and remove the white skins outside and inside as best you can (I don`t find filleting necessary). Then cut into pieces and put in a saucepan with the juice, 50 g sugar, the cloves and the cinnamon. Stir in the starch and bring to the boil briefly and then allow to cool. Finally add a splash of lemon juice.
Tip: I always get an orange peppered with cloves for Christmas. I often use it while it`s still fresh, then you taste the cloves better. To do this, I pull all the cloves out of the orange, peel them, remove the skins and cut them into pieces. I then add them to the finished orange preparation.
Crumble the speculoos.
Now put a layer of cream in the prepared glasses, then a layer of the orange preparation and on top of it the crumbled biscuits (for me it was always a good tablespoon full, only I took a little less of the biscuits). Chill for two hours.
