Pulp the seeds from the pomegranates, puree them and strain them through a sieve. Peel the oranges and remove the outer skin. If you can`t get a date puree, you can make it yourself. Boil the dates in a little water until soft, then puree and weigh. Cut the dried apricots very small. Simmer everything together with the spices for about 10-15 minutes. If you like, you can take out the star anise now. Now stir in the preserving sugar and cook for another 4 minutes.
Make a gel test. Pour hot into twist-off glasses.
Tips:
Since the dates are very sweet, I would not use preserving sugar 1: 1. If you like it a little more fruity, you can use a little more oranges or orange juice.
You can also mix this jam with cream cheese and then have a hearty spread or dip.
