Ingredients

  • 2 bell pepper (s)
  • 1 head broccoli
  • 1 sweet potato (s)
  • 1 onion (s)
  • 0.5 ½ cup lentils, about 100 ml
  • Salt water

For the dressing:

  • 1 garlic bulb (s)
  • 4 tablespoon olive oil
  • 3 tablespoon lemon juice
  • 0.5 teaspoon ½ maple syrup
  • salt and pepper

Also:

  • 2 tablespoon date (s), quartered
  • 2 tablespoon almond sticks
  • salt and pepper
  • Chilli flakes
  • Ras el Hanout

Instructions

  1. Cut off the roots of the garlic bulb and wrap the garlic in aluminum foil. Place the garlic on the baking sheet, slide the sheet into the oven and heat the oven to 200 ° C top / bottom heat. Cook the lentils in enough salted water for about 30 minutes until they are soft.
  2. Chop the sweet potato and all the vegetables, except for the onion, and toss them one after the other in a bowl with oil, salt, pepper, chilli flakes and a pinch of Ras el Hanout, so that all the pieces are covered with oil and spices.
  3. Halve the onion and cut into slices. As soon as the oven is hot, put the vegetables in rows on the baking sheet, the sweet potatoes should be next to each other and not overlap. Pour the onions over the sweet potatoes. Bake the vegetables for 20-30 minutes, until they are cooked and lightly brown.
  4. Squeeze the garlic from the cloves and mix with the remaining ingredients to make a dressing. Season the dressing with salt and pepper.
  5. Arrange the vegetables and lentils in 2 bowls, garnish with dates and almond sticks and serve with the dressing.
