Pisto Manchego (Spanish Vegetable Stew)

A wonderful summer dish with eggplant, zucchini and a lot of other delicious vegetables! Pisto manchego is a Spanish vegetable stew that is usually served with an egg. Fresh, bright taste, incredible aroma – and all this will delight you with your family!

Ingredients

  • Zucchini – 1-2 pcs.
  • Eggplant – 1-2 pcs.
  • Bulgarian pepper – 3 pcs.
  • Tomatoes – 5 pcs.
  • Bulb onions – 1-2 pcs.
  • Garlic – 2 cloves
  • Tomato paste – 1-2 tbsp
  • Eggs – 4 pcs.
  • Small fresh hot pepper – 1 pc.
  • Olive oil – for frying Salt to taste

Directions

  1. First of all, cut the eggplants into cubes. Add salt, mix and let stand for about 10 minutes. So the eggplants will not “creep away” when cooking, but will keep their shape.
  2. Cut the zucchini (zucchini) into medium cubes.
  3. Remove the seed capsule from the sweet pepper. Chop the pepper.
  4. Cut the garlic cloves into slices and fry in hot oil for 10 seconds to let the aroma go.
  5. Add the diced onion and fry until golden.
  6. Meanwhile, slightly cut the tomatoes crosswise and pour boiling water over for 1 minute. Then we easily and carefully peel them. The result is an export version. 🙂
  7. We squeeze the eggplants and send them to fry with the onions.
  8. Eggplant is enough for 5 minutes and you can add zucchini, also for 5 minutes.
  9. It’s time to prepare the tomatoes. Cut into cubes. Although you can do it arbitrarily, the tomatoes will disperse during cooking.
  10. Then it was the turn of the peppers. Pour the cubes of sweet pepper, and cut the hot one in half (let it give off its sharpness). Mix well and fry for 5-7 minutes.
  11. We are on the home stretch! Add tomato paste and chopped tomatoes, stir, and simmer vegetable stew over medium heat for 15-20 minutes.
  12. By the way, it’s high time to add some salt, but don’t forget that we had salted eggplants.
  13. Manchego pisto (Spanish vegetable stew) is done! The aroma is stunning! Usually pisto manchego is served with a baked egg, we will fry the egg in a pan.
