Ingredients

  • 750 g potato (s), small new ones
  • 1 small onion (s), red
  • 1 tablespoon capers
  • 3 tablespoon olive oil
  • 1 tablespoon balsamic vinegar
  • 4 tablespoon parsley, finely chopped
  • a bit salt
  • Black pepper

Instructions

  1. Brush the potatoes clean and put them in a saucepan. Cover with water, bring to a boil and simmer over low heat for 15-18 minutes. Drain, let cool a little and cut in half.
  2. Peel the onion and chop finely. Sprinkle over the capers and let them drain. Mix the oil, vinegar, onion, capers and parsley together. Season with salt and pepper.
  3. Put the potatoes in a bowl and drizzle with the dressing. Then mix everything loosely. Serve the potato salad warm or slightly chilled.
