Processed Cottage Cheese

A simple but very interesting recipe for processed cheese from cottage cheese. Adding a small amount of a mixture of cottage cheese and butter to the cooked processed cheese makes its taste and texture very original. Such a delicious spread for sandwiches does not take long to cook and products are quite affordable for it. Definitely worth a try!

Ingredients

  • Cottage cheese (fat content from 9%) – 400 g
  • Egg – 1 pc.
  • Butter – 80 g
  • Salt – 1/2 teaspoon
  • Sugar – 1/2 teaspoon
  • Soda – 1/2 teaspoon

For filing (optional):

  • Bread – 2-3 slices

Directions

  1. Prepare foods according to the list. It is best to choose cottage cheese with a high percentage of fat. The fatter the cottage cheese, the softer the structure of the processed cheese will be, and vice versa – if you use low-fat cottage cheese, then the processed cheese will be “rubbery”. It is best to remove the butter from the refrigerator beforehand.
  2. Combine cottage cheese with softened butter and grind into a homogeneous paste. I used a blender. If you wish, you can do with a sieve, but it should be borne in mind that the more the curd-oil mixture looks like a paste, the faster it will melt.
  3. Set aside about 1/4 of the resulting mixture of cottage cheese and butter – at the end we will mix them into the finished processed cheese.
  4. Add an egg to most of the curd mass.
  5. Add salt, sugar and soda.
  6. Mix thoroughly until smooth.
  7. Transfer the curd mass to a metal bowl.
  8. Fill a saucepan that is smaller in diameter than the dia of the bowl about 1/3 full with water. Set to maximum heat and bring to a boil. Then reduce heat to medium and put a bowl of curd mass on a saucepan. It turns out a water bath – it is important that the bottom of the bowl does not touch the water.
  9. Stirring constantly, cook the melted cheese for about 10-15 minutes, until the curd mass melts and begins to drain from the spoon like a ribbon.
  10. Now mix the previously set aside curd-butter mixture into the finished processed cheese. If desired, you can add chopped herbs, ham, fried mushrooms, dried herbs or spices to your taste.
  11. You can store such processed cheese from cottage cheese in sealed jars, in the refrigerator.
  12. Or immediately serve on slices of bread. This is delicious! Be sure to try.
