Mini-pizzas made from crispy puff pastry stuffed with juicy tomatoes and two types of cheese. Mini puff pizzas are very flavorful thanks to the addition of basil to olive oil, which is applied to the base of the pizza.
Ingredients
Puff pastry – 500 g
Tomatoes – 2 pcs.
Mozzarella cheese – 40 g
Parmesan cheese – 40 g
Olive oil – 2 tbsp
Fresh basil – 10 leaves
Salt to taste
Ground black pepper – to taste
Egg (optional) – 1 pc.

Wash basil leaves, dry, chop finely. Put chopped basil in olive oil, season with salt and pepper to taste.
Grate both types of cheese.
Wash the tomatoes, cut into slices about 4-5 mm thick.
Defrost the puff pastry. Then cut into squares and place on a baking sheet lined with parchment.
Brush the dough squares (center) with olive oil and basil.
Put the grated mozzarella cheese on top of the butter.
Raise the opposite corners of the square and fasten them together.
Brush the dough with a beaten egg if desired.
Bake puff mini pizzas with tomatoes in an oven preheated to 200 degrees for 15-20 minutes.
