Pumpkin and Potato Casserole with Minced Meat Ingredients

For the top layer:

  • Pumpkin – 500 g
  • Potatoes – 500 g
  • Large onions – 0.25 pcs.
  • Garlic – 2 cloves
  • Bay leaf – 1 pc.
  • Black peppercorns – 5 pcs.
  • Allspice peas – 2 pcs.
  • Salt to taste
  • Butter – 30 g
  • Green onions (for decoration) – to taste

For the bottom layer:

  • Minced meat (I have beef) – 500-600 g
  • Bulb onions – 1 pc. (170 g)
  • Carrots – 1 pc. (100 g)
  • Green peas (optional) – 50-60 g
  • Corn (optional) – 50-60 g
  • Garlic – 2 pcs.
  • Soy sauce – 3 tbsp
  • Ketchup – 3 tbsp
  • Wheat flour – 1 tbsp
  • Ground coriander – 1 teaspoon
  • Salt to taste
  • Ground black pepper – to taste
  • Vegetable oil – for frying and greasing the mold

Pumpkin and Potato Casserole with Minced Meat Instructions

  1. For the top layer of the casserole, pour the peeled potatoes and peeled pumpkin, cut into large pieces, with cold water. Salt to taste. For flavor, add peeled garlic and onions, black and allspice, and bay leaves. Boil potatoes and pumpkin until tender.
  2. For the bottom layer of the casserole, chop the peeled garlic with a knife. Cut the peeled carrots into small cubes.
  3. Cut the peeled onion into small cubes. Add garlic, fry for another minute. Increase heat to maximum. Add minced meat to the onion, fry for a couple of minutes.
  4. Reduce heat. Add the ground coriander, ketchup, and soy sauce. Mix. Salt if necessary. Add flour and freshly ground black pepper. Add carrots, corn, and green peas. Stir and simmer for 5 minutes.
  5. When the potatoes and pumpkin are ready, drain the water, remove the spices and onions (you can leave the garlic). Add butter.
  6. Purée the pumpkin and potatoes with a crush. If necessary, you can add a little vegetable broth, in which the potatoes and pumpkin were cooked, or hot milk to get the consistency of puree that you like best.

  7. Preheat the oven to 200 degrees. Grease a baking dish (I have a ceramic one) with vegetable oil. Put the minced meat in the form. Above – mashed potatoes and pumpkin.
  8. With a fork, you can draw a pattern on the top layer. Cook pumpkin and potato casserole with minced meat at 200 degrees for 15-20 minutes.
  9. Decorate the pumpkin-potato casserole with minced meat with finely chopped green onions and serve.
