Ingredients

  • 1 pumpkin (se) (Hokkaido or butternut)
  • 1 can tomato (s), chopped
  • 1 jar olives, green
  • 1 feta cheese
  • 1 clove garlic
  • thyme
  • salt and pepper
  • olive oil

Instructions

  1. If necessary, peel the pumpkin and cut into small cubes. Mix with olive oil, salt and pepper in a baking dish and place in the oven at 200 ° C top / bottom heat for about 20-30 minutes to pre-cook the pumpkin.
  2. In the meantime, crumble the feta and chop the olives.
  3. At the end of the cooking time, mix the pumpkin with the tomato pieces, the feta, the olives and a pressed garlic clove and season with plenty of thyme. Finish cooking in the oven for approx. 20 minutes.
  4. Rice goes well with this.
  5. Of course, black olives can also be used and the amount of ingredients can be varied according to taste.
